Biography
My food philosophy is all about keeping things simple, seasonal and achievable. Food for me is all about the recreation of a memory. Like many other Kiwi adventurers, we travel to experience other cultures and delve deeply into the food world of others. I have done this my whole life and tried to bring back some of the greatest flavours from around the world to share with friends and family. I don’t think there is any better gift than feeding the ones you love, watching a smile spread across someones face when they eat something delicious.
A Plant-Based Diet
As a chef I am always looking for amazing new tastes, products and techniques. I am always looking at how, when and where a product was made. I am constantly looking to ensure what I cook caters for many different palates and food philosophies. I know now there is a new wave of protein hitting our stores and ethically we all need to give it a go. But does this new player cook the same? Does it react the same with other ingredients. This demo is to find the answers to these simple yet important questions.
